For as long as I can remember, breakfast was the most essential meal of the day in my family. My mom would never let anyone leave the house in the morning without a proper breakfast. She’d prepare cut fruits and homemade muffins that we could grab and eat on the go.
To this day, if i’m a rush and have no time to eat, it will not be a good day that’s for sure! Luckily my passion for breakfast ensures that I rarely skip breakfast.
For me, slowing down and taking the time to make myself a nice espresso and breakfast bowl will decrease stress for the rest of the day. Mornings are a time for mindful reflection and preparation the day ahead. Being very active, eating a nutritious breakfast for me is essential to have the strength and energy to tackle whatever the day may bring.
In these warm summer months, my go-to recipe is a nice cold bowl of overnight oats topped with seasonal fruit. I prefer eating calmly at home, but this recipe is easy to carry in a jar.
1/3 cup oats
2 tbsp chia seeds (I use Prana Proactivchia seeds)
1 tbsp maple syrup (as a topping)
Handful of nuts of your choice
1/4 cup fresh blueberries or fruit of choice (pureed raspberries or apple and cinnamon is also delicious)
Unsweetened almond milk
Mix all the ingredients in a Mason jar, adding the almond milk last. Shake well and let sit in the refrigerator overnight.
