Sweet and Salty Oatmeal with Lentil Flakes, Miso and Apple

This oatmeal has nothing to do with instant preparations. The addition of lentil flakes makes the oatmeal even more nourishing and satisfying. In addition, the presence of a beautiful green vegetable and the sweet and salty mixture makes it a perfect dish at any time of the day! In this version, grilled apples are added as a garnish, as they are seasonal. We could also choose to add grilled squash slices, grated carrot, pears or any other fruit or vegetable that goes well with salty dishes.

Ingredients for two regular servings (or a portion for an ogre!)

  • 2/3 cup oatmeal, amaranth or buckwheat from GoGo Quinoa;

  • 1/3 cup GoGo Quinoa red lentil flakes, lightly rinsed in water and drained;

  • 1 cup neutral and unsweetened plant based drink (avoid vanilla drinks);

  • 1 cup of water

  • 1 tablespoon pale miso paste;

  • 1 tablespoon of maple syrup;

  • 1 tablespoon of yeast in flakes (also called nutritional yeast, RedStar yeast, B12 yeast – it’s not bread yeast);

  • A pinch of salt (we can use Himalayan salt from GoGo Quinoa).

For apples:

  • 2 small apples or a large seasonal apple, thinly sliced;

  • 1 tablespoon of neutral vegetable oil;

  • 1 pinch of cinnamon.

Garnishes, to taste:

  • 1 cup finely chopped kale;

  • Pistachios or other nuts;

  • Hemp seeds;

  • Tahini (adds creamy);

  • Puffed Quinoa from GoGo Quinoa.


In a cauldron, put the oatmeal, the lentil flakes, the plant-based drink and water. Stir lightly. Bring to a boil, and immediately reduce the heat to medium. Simmer for about 5-6 minutes, or until the liquid has been absorbed (look for a relatively creamy consistency). Close the heat. Add the miso paste, maple syrup, yeast and pinch of salt, and mix well, for 1-2 minutes.

While cooking the oatmeal, put a spoonful of oil in a hot skillet. Brown the apple slices for about 2-3 minutes on each side, or until they are well colored. Remove the apples from the pan. While still hot, add the chopped kale with a tablespoon of water and a pinch of salt. Cook for about a minute, or until the kale has softened.

For the presentation:

Put the oatmeal in the bowls. Garnish with apples, steamed kale and toppings to choose from.
